Blanc de Noir (French for "white from black") refers to a method of making white wine from red grapes. The must must be quickly separated from the grape skins to prevent it from absorbing too much of their pigment.
It is then vinified as usual with white wine.
Our Kimich Blanc de Noir is light yellow and sparkles slightly immediately after opening.
It smells of apple and pear, perhaps with a hint of lychee, and has a lovely mineral undertone. The acidity is pleasantly balanced.
Overall very refreshing.
